Preheat the oven to 350F (180 C). Grease a 10″ (4 L) tube pan.

Put the pears, cranberries, brown sugar and cinnamon in a medium-sized bowl. Stir to combine. Set aside.

Beat the eggs and sugar until the mixture is pale.
Add the oil, orange juice and orange extract and mix well.
Add the flour, baking powder and salt, which have been sifted beforehand, and mix well.
Using a spoon, put 2/3 of the batter into the prepared pan.
Place the pear and cranberry mixture on top of the batter and pour the remaining 1/3 of the batter over it. (Don’t worry if the pear mixture isn’t completely covered.)

Bake in the preheated oven for 60 to 70 minutes or until a toothpick inserted into the center of the cake comes out clean.
