Wash the pears and quinces, remove the stems and cores without peeling.
Grate the fruits (skin and pulp) and add the sugar gradually.

Put everything in a large saucepan and cook gently, 1 hour 15 to 1 hour 30, stirring occasionally.
The jam will be a color similar to honey.

Put in jars that have been boiled beforehand and close the lids.
Put the jars in a large saucepan filled with water, bring to a boil and count 15 minutes from that, to sterilize the jars.
