1. Remove the stem and top of the peppers. Carefully hollow out the peppers without piercing the flesh. Place the peppers in a baking dish.
2. Preheat the oven to 375°F.

4. Cover with aluminum foil. Bake for 30 minutes. Remove from the oven. Remove the foil. Top each pepper with grated cheddar.
5. Bake for 10 minutes. Serve immediately.
