Peel the pineapple and cut off the ends. Cut the fruit lengthwise into 4 pieces and discard the tough central part.
Using a mandoline, cut each piece of pineapple into thin slices and arrange them on a plate or individual plates.
Cover with plastic wrap and refrigerate.
Cut the strawberries into sticks and gently mix with sugar and orange juice. Cover and refrigerate.
In another bowl, mix the maple syrup, nutmeg, anise, cinnamon, and lime juice.
Let it sit for at least 20 minutes at room temperature.
Brush the tops of the pineapple slices with the spiced maple syrup.
Garnish with strawberry sticks and serve immediately.
