Preparation
Dough:
1. Dissolve yeast in warm water. Mix all ingredients in a large bowl. Knead for 5 minutes on a floured surface.
2. Put dough in a lightly oiled bowl, cover with a damp cloth and place in a warm place. Let dough rise for 1 hour, or until it has doubled in size.
Sauce:
3. Press tomatoes through a sieve until smooth, drain and discard juice.
4. Add salt, pepper, basil, sugar, and pizza sauce. Mix well and set aside for later use.
Preparation:
Preheat oven to 500°F with oven rack in lower position.
5. Grease mold with olive oil, making sure the inner edge is covered. Tap dough for a few minutes, sprinkle with flour, place in mold. Press dough until it covers the mold from side to side.
6. Place cheese on top of dough. If using sausage, mushrooms, or other toppings, place them on top of cheese.
7. Pour tomato topping mixture over cheese (and other toppings if used).
8. Press tomato mixture into cheese with a spatula, making sure to cover the entire pizza surface. Sprinkle with oregano (and parmesan and/or romano to taste).
9. Bake in preheated oven for 20 minutes.
