1- Preheat the oven to 190 C (375 F).
2- In a baking dish, mix the quartered pears, onion slices, and olive oil. Bake for 20 minutes.
3- In a small bowl, mix the butter and Dijon mustard.
4- In a pan, heat a little oil and cook the boneless pork chops 1 minute on each side.
5- Remove the dish from the oven. Transfer the pork chops to the pears and onions. Brush the pork chops with the butter-mustard mixture.
6- Put back in the oven for 15 minutes.
7- Remove from the oven and serve immediately.
