Oil and preheat the barbecue grill.
Remove the fat and skin covering the fillets.
Using a knife, make incisions in the flesh and insert a small piece of garlic. Pour the oil and maple syrup into a small bowl. Add the soy sauce and dry mustard, mix well. Season to taste and generously brush the fillets.

Place the pork fillets on the grill, leave uncovered. Sear the fillets on all sides, for 6 to 7 minutes. Continue cooking for 35 to 40 minutes, turning several times during cooking. The fire should be low. Brush the fillets during cooking.
