1. With a small knife, make 6 small incisions in the pork loin; fill with half of the garlic slices and rosemary.
2. Grease a baking dish with extra virgin olive oil and cook the pork loin in a preheated oven at 200°C, for about 40 minutes. Baste with the wine and continue cooking until the liquid has reduced by half.
3. Serve in thick slices with the bone, with a few spoons of the remaining sauce or a drizzle of extra virgin olive oil.
