Preparation

1. Preheat the oven to 350°F.
2. Cook the pork ribs in boiling water for 15 minutes. Drain and set aside.
3. In a large bowl, prepare the marinade. Mix the ketchup, brown sugar, salt, and pepper.
4. Put the ribs in the marinade and refrigerate for 1 hour.
5. Remove from the fridge and bake for 1 hour. Baste occasionally.
6. In a saucepan, melt the butter. Sauté the shallots until translucent. Add the white wine and reduce by a third. Cover and simmer for 10 minutes over low heat.
7. Remove the meat from the oven and serve with the shallots.
