Preparation
1. In a sealed plastic bag, place the roast. Add extra virgin olive oil, wine, peeled and chopped onion, rosemary, thyme, bay leaves, salt, and pepper. Shake. Close and let marinate overnight in the refrigerator.
2. The next day, remove the roast from the bag.
3. Preheat the oven to 180°C.
4. Place the roast in a greased dish; bake and cook for 90 minutes.
5. Meanwhile, peel the potatoes and carrots; cut into large pieces. Cut the head of garlic into thin slices.
6. 45 minutes before the end of cooking, add the vegetables to the roast; turn in the juice of the dish; season lightly, pepper and finish cooking.
