1. Preheat the oven to 350 degrees F.
2. In a large, heavy pot or Dutch oven with a lid that can go in the oven, heat the oil and butter over high heat and brown the meat on all sides.
3. Then, remove the pork and sauté the chopped onions.
4. Deglaze with red or white wine (balsamic vinegar) and make sure to scrape up all the meat juices.
5. Mix all the other ingredients together and bring to a boil.
6. Put the pork back in and cook in the oven for 3 hours.
7. 1 hour before the end of cooking, add the peeled and halved potatoes to the broth and continue cooking without a lid for the last hour.
