1. Preheat the oven to 350°F.
2. In a bowl, combine the Calvados, maple syrup, and crushed garlic. Season with salt and pepper. Marinate the pork fillet in this mixture for 40 minutes.

4. In a hot pan, over medium heat, melt half of the butter. Add the fennel and sauté until translucent, about 5 minutes. Add the marinade and simmer for 7 minutes. Season with salt and pepper.
5. In another pan, melt the remaining butter. Add the pork fillet and brown on all sides.
6. Transfer to a baking dish and bake for 20 minutes.
7. Remove from the oven and serve the whole pork fillet on a bed of sautéed fennel.
