Heat the oil in a pan, then scramble in the egg. Let it rest for 30 seconds to 1 minute, stirring occasionally, then chop it finely. Add the bacon and mushrooms to the pan, fry until golden brown, about 3 minutes. Add the peas, garlic, and ginger, then cook for 1 minute.
Mix the soy sauce and sugar together. Increase the heat, add the cooked rice to the pan, stir-fry, then add the sweet soy sauce. Combine the egg and serve immediately, with more soy sauce if desired.
