Preparation
1. Preheat the oven to 180°C.
2. Put the racks in the oven, garnished with a sprig of thym. Add the 2 stock cubes diluted in 200 ml of water. Cook for 20 minutes, basting regularly.
3. In a bowl, mix the grated parmigiano, rosemary, and pepper with the 2 egg yolks to obtain a smooth paste.
4. Remove the racks from the oven and generously cover them with the parmigiano paste, about 1 cm thick.
5. Put the meat back in the oven at 240°C in grill position and leave for 10 minutes. The grilled parmigiano will form a golden and crunchy crust.
6. Remove from the oven and serve immediately.
