Preheat the oven to 375 F (190 C).
Prepare 2 cookie sheets by lining them with parchment paper.
In a large bowl, cream the butter, sugars, and salt with an electric mixer.
Add the coconut, nuts, chocolate chips, vanilla, and eggs, and mix well, then set aside.
In a medium bowl, combine the flour, oats, baking powder, baking soda, and cinnamon.
Gradually add the flour mixture to the wet mixture in the bowl, mixing well after each addition until it is fully incorporated.
Using a small ice cream scoop, shape the dough into balls the size of a large walnut.
Place them on the prepared cookie sheets, spacing them 2 inches (5 cm) apart, then flatten them slightly.
Bake in the oven for 10 to 12 minutes or until the cookies are golden brown around the edges.
Remove the cookie sheets from the oven and let cool for 5 minutes before transferring to a cooling rack.
