1. In a large saucepan, melt the butter. Add the onions and cook for 2 minutes over medium heat. Add the rice and stir to coat the rice with butter.

2. Add the white wine and let it evaporate. Add just enough hot chicken broth to cover the rice. Stir slowly with a spoon.

3. When the liquid evaporates, add more broth to cover the rice and continue stirring.

4. When all the broth is used, add the peas. Cook, stirring, until all the liquid is absorbed and the rice is tender to the bite. Add the parmesan. Season with pepper. Remove from heat.

5. Gently fold in the slices of foie gras. Serve immediately.
