Preparation
1. Preheat the oven to 350⁰F.
2. In a bowl, mix 40g of butter and whole-grain mustard. Brush the pork fillet with this mixture.
3. In a skillet, melt the butter and brown the pork fillet for 2 minutes. Season generously with salt and pepper.
4. Chop the mixed herbs and place the pork fillet on top.
5. Roll the fillet with the herbs around it and tie it like a roast.
6. Butter and oil a baking dish. Place the herb-crusted pork in it.
7. Bake for 20 minutes, basting at least once during cooking.
8. Remove from the oven and serve whole with your choice of sides.
