Mix ricotta, mozzarella, and 1 cup of parmesan with eggs, well-drained spinach, salt, pepper, and nutmeg to taste. Set aside.
Cook the lasagna according to the cooking mode.
While cooking the lasagna, heat the oil in a pot. Add the onion and garlic. Sauté until tender. Add the tomatoes and tomato paste. Season to taste with salt, pepper, and basil. Simmer, half-covered, for 15 minutes. Crush the tomatoes with a potato masher during cooking.
Spread the cheese filling over the cooked and rolled lasagna. Spread a few spoonfuls of sauce in a baking dish. Place the rolls in the dish. Pour the remaining sauce over the top. Cover with aluminum foil. Bake for 25 minutes. Remove the foil and sprinkle the top with the remaining parmesan cheese and 1 tablespoon of chopped parsley. Bake for an additional 5 minutes.
