1. Rinse, dry and chop the parsley. Clean the leeks and cut them into slices. Peel the carrot and cut it into sticks. Finely chop the fresh pepper.

2. In a wok or large pan, heat 50 ml of peanut oil. Add the leek, carrot and pepper; cook for 4 minutes, stirring. Add a pinch of sugar, and cook for 4 minutes.

3. In a pan, heat 2 tbsp of oil and sear the salmon for 3 minutes on each side, over high heat. Season with salt and pepper. Remove the salmon and set aside to keep warm.

4. Remove the vegetables from the wok.

5. Sear the parsley leaves in the remaining oil. Place the vegetables on the plates and the salmon on top. Cover with the fried parsley, and drizzle with a splash of soy sauce.
