1. In a food processor, chop the onion.
Add the salmon and zest.
Season with salt and pepper. Refrigerate.
2. Space out the pastry squares on the work surface. Place a small spoonful of filling in the center.
Dampen the edges of the pastry squares with your finger.
3. Close by sticking the pastry to itself.
For cooking:
4. In a pan with fat, place the dim sum and brown on both sides.
Pour in the broth and cover for 5 minutes. Serve.
