1. In a large pot of salted water, cook the potatoes until tender when pierced with a knife. Drain.
2. Preheat the oven to 375°F.
3. Mash the potatoes and pass them through a sieve to obtain a smooth purée. Season with salt and pepper. Add the butter and warm milk. Mix well, beating with a wooden spoon. Set aside.
4. In a saucepan, pour in the white wine and bring to a boil. Place the salmon fillet in the white wine. Season with salt and pepper. Cover the saucepan and simmer over low heat for 10 minutes.
5. Butter 4 small individual ramekins. At the bottom of each, place a few pieces of cooked salmon. Sprinkle with chervil. Cover with potato purée.
6. Bake for 15 minutes. Remove from the oven and serve very hot.
