1. Preheat the oven to 375°F.
2. On pieces of parchment paper, place the salmon fillets. Season with salt and pepper.
3. On each fillet, place a few slices of zucchini and carrots. Drizzle 1 tbsp. of olive oil over each fillet. Sprinkle with curry powder.
4. Close the parchment paper packets. Place on a baking sheet and bake for 20 minutes.
5. Remove from the oven.
6. Open the packets, sprinkle with chopped chives, and serve with a bowl of rice.
