3. Place each fillet on a square of oiled parchment paper. Cover each fillet with tomatoes, cut side facing the fish. Add the sprigs of parsley and tarragon. Fold into a papillote.
4. Place the papillotes in a baking dish. Cook for approximately 20 minutes in the oven.
5. Remove from the oven; open the papillote in front of the guests.
