In a pan, heat the olive oil. Add the chopped onion and cook for 2 minutes. Add the green onion and cook for 1 minute. Remove from heat.
Add the crumbled cooked salmon, dill, and parsley. Season with salt and pepper. Mix. Set aside.
Roll out the puff pastry on a floured surface. Cut out squares of pastry.
Preheat the oven to 385°F.
Place small heaps of the salmon mixture in the center of each pastry square. Fold the pastry into triangles over the edges of the pastry using your fingers, with a little water. Make a slit on top of each triangle.
In a small bowl, beat the egg. Brush each pastry triangle with the beaten egg.
Place the pastries on a baking sheet. Bake and cook for 20 minutes or until golden brown.
