1. In a sauté pan, cook the fresh salmon with white wine for 5 minutes and pour in the cognac. Season with salt and pepper, and let cool.

2. Mix the two types of salmon in a food processor, but do not use the “knife” attachment.

3. Add the pomade butter and cream. Season with salt and pepper, and add the herbs. Add a squeeze of lemon juice and mix.

4. Fill a ceramic or silicone terrine, pressing down well to eliminate air. Cover and refrigerate.
