1. Preheat the oven to 200°C.

2. Peel and chop the onion.

3. Remove the earthy base of the mushrooms, peel and chop.

4. Rinse, dry, strip and chop the basil.

5. Dip the tomatoes in boiling water for 10 seconds, drain, peel and pit. Coarsely chop.

6. Wrap the piece of salmon in bacon; place the "roast" in the center of a large greased parchment paper. Arrange the mushrooms, onion, tomatoes, and chopped basil on top and around. Season with salt and pepper.

7. Close the paper hermetically.

8. Place in a large dish and bake for 25 minutes.

9. Remove from the oven. Serve the salmon sliced with its cooking juice and a potato puree with olive oil.
