1. Preheat the oven to 375°F
2. Cut 8 pieces of salmon from the fillet using a round cookie cutter. Season with salt and pepper.
3. Chop all the herbs in a food processor.
4. Add the shrimp and lemon zest; season with salt and pepper. Mix to crush the shrimp.
5. Sprinkle a little almond powder on half of the salmon pieces. Top with some shrimp mixture. Place the other salmon pieces on top to form sandwiches. Sprinkle with almond powder. Season with salt and pepper. Hold in place with toothpicks.
6. Place on a buttered baking sheet and bake for 25 minutes.
7. Remove from the oven and serve with a salad of young shoots.
