1. In a bowl, mix the mayonnaise, sour cream, lemon juice, and orange juice.
2. In a bowl, beat the eggs with a fork. Leave on hold. Transfer the panko breadcrumbs to a plate.
3. In a saucepan, heat the vegetable oil.
4. Dip the flesh side of the salmon fillets in the beaten eggs. Place the fillets on the panko breadcrumbs, pressing well on the flesh side and the sides of the salmon.
5. Transfer the salmon fillets to the saucepan, placing the panko side in the oil. Let it brown.
6. Turn the fillets over to the skin side. Cover the saucepan. Reduce the heat to a minimum and cook for 5 minutes.
7. Serve the fillets with the sour cream sauce.
