Heat the oven to 450 F.
Mix the flour, baking powder, and salt. Add the fat and cut it into the flour with a pastry blender or 2 knives, until crumbly texture. Set aside a little egg white (to brush the pancakes) and whip the eggs lightly. Add the milk. Pour all at once over the dry ingredients and stir vigorously with a fork until the dough is just homogeneous. Roll out to the desired thickness. Cut out with a cookie cutter. Brush with egg white.
Bake for 12 to 15 minutes, on an ungreased cookie sheet.
