1. Peel the shrimp, leaving the tails. Place on a plate, lightly season with salt and pepper.
2. Butter (using 30 g) 4 individual gratin dishes.
3. In a large non-stick pan, heat the extra virgin olive oil and add the shrimp. Cook over high heat for 1 minute per side. Arrange in the gratin dishes.
4. Preheat the broiler.
5. In a saucepan, melt the chopped shallot until transparent. Add the cognac, cream, Szechuan pepper, and green pepper; let reduce by half. Remove from heat and let the sauce cool slightly. Add the chives and egg yolks, whisking.
6. Pour the sauce over the shrimp.
7. Place under the broiler and let brown for just 3 to 4 minutes.
8. Remove from the oven and serve immediately.
