1. Sauté the onion and garlic in olive oil. Add the shrimp and cook for 3 minutes, then add the water chestnuts and lemon juice. Season with salt, pepper, and fish sauce.
2. Blend everything in a food processor to make a smooth filling.
3. Arrange the squares of pastry on the work surface, then place ½ teaspoon of the mixture on each of the won ton pastry.
4. Moisten the edges of the pastry with a little water before folding it in half to form a triangle. Pleat towards the inside. Set aside.
5. Bring the broth to a boil and cook the won ton for 5 minutes.
6. Add the green onions, pepper, and coriander just before serving.
