Preparation
1. Cook the shrimp in a pot containing 3 liters of boiling salted water for 5 minutes. Drain and reserve the cooking water. Peel the shrimp. Set aside.
2. In a pan, melt the butter. Add the onions; cook over medium heat for 2 minutes. Add the shrimp shells and cook for 3 minutes. Add the tomato paste and diced tomatoes. Sprinkle with flour and cook for 2 minutes, stirring.
3. Pour in the shrimp cooking water and season with salt and pepper. Simmer for 25 minutes.
4. Remove from heat and strain the mixture.
5. Add the cream and mix. Add the shrimp pieces, reserving a few for garnish. Reheat over low heat for 4 minutes.
6. Serve in warm plates. Garnish with parsley and shrimp before serving.
