Preparation
On a lightly floured surface, roll out the broken dough to a thickness of 1/8 inch (3 mm).
Brush the dough with butter and sprinkle with maple sugar, making sure to leave a 1-inch (2.5 cm) strip of dough without filling.
Brush the egg yolk on the strip of dough without butter or sugar.
(This strip will be used to glue the roll of dough to prevent it from coming apart during cooking.)
Roll the dough firmly in the direction of the portion brushed with egg yolk.
Refrigerate the roll for 1 hour.
Preheat the oven to 400 F (200 C).
Prepare baking sheets by lining them with parchment paper.
Cut the roll into 1/2-inch (1 cm) thick slices.
Place the dough slices flat on the baking sheets and bake for 20 minutes, until the dough is golden brown.
Dip the sister’s pets one by one in the hot caramel. Let the caramel set before serving.
Caramel:
In a saucepan, reduce the cream and syrup by half to obtain a coating caramel.
