Preparation
In a large bowl, dilute the yeast in the lukewarm water, then add 1 and 2/3 cups (200g) of flour. Mix until a homogeneous texture is obtained, then cover the preparation with the rest of the flour.
Let it rise for 15 minutes, then add the eggs, sugar, and salt, and mix with a wooden spoon.
When the mixture is homogeneous, pour the melted butter over the preparation and mix well with a wooden spoon to incorporate it well.
Cover the bowl with plastic wrap and let it rise for 30 minutes.
Preheat the oven to 350 F (180 C).
Using a spoon, fill the dough into 12 molds for babas or buttered muffins, half full.
Wait for the dough to rise to the edge of the mold (about 20 minutes) and put it in the oven for about 25 minutes.
Unmold, place the babas on a grid.
The syrup:
Put the ingredients in a saucepan and heat until the sugar is dissolved.
Place the babas in a large dish and pour the syrup completely over them.
Let them soak for 5 minutes, then turn them over to the other side. Repeat the operation 4 times in a row so that they are well impregnated with syrup everywhere.
Melt the apricot jam in the microwave and brush the babas with hot jam.
