In a large bowl, sprinkle the yeast over the warm water.
Add the sugar and salt and mix until they are completely dissolved.
Add the egg, butter, and 3 cups (360g) of flour.
Using an electric mixer, beat at maximum speed for 2 minutes.
Gradually add the parmesan, dried onion, and cayenne pepper.
Add the remaining flour and mix.
On a lightly floured surface, knead the dough until it is smooth and elastic.
Place the dough in a large bowl and brush with melted butter.
Cover the bowl with plastic wrap and let the dough rise in a warm place for 1 hour or until it has doubled in volume.
Punch down the dough with your fist and divide it into two equal parts.
Divide the first part into 12 equal pieces and shape them into small long breads that you will place on a large baking sheet lined with a silicone mat.
Cover with a cloth and let rise for 45 minutes.
Divide the second part into 16 pieces and shape each piece into small balls that you will place in a 10″ (25cm) round cake mold, leaving some space between them.
Cover with a cloth and let rise for 45 minutes.
Preheat the oven to 375F (190C) and bake the breads for 15 to 20 minutes or until they are golden brown.
Brush with melted butter as soon as they come out of the oven.
