In the culinary robot, equipped with the blade, put the flour, salt, and sugar, and pulse to mix.
Add the butter and pulse until the butter is well incorporated.
Add the water and vanilla extract and pulse until the dough forms a ball.
Wrap the dough in food film and refrigerate for one hour.
On a floured work surface, roll out the dough to a thickness of 1/8 inch (3 mm).
Using the cookie cutter, cut out the biscuits and place them on baking sheets lined with parchment paper.
To make sure the biscuits do not move during baking, put them in the freezer for 10 minutes.
Preheat the oven to 350 F (180 C).
Put the biscuits on the middle rack of the oven and bake for 12 to 15 minutes, or until the biscuits are golden brown on the edges and, if possible, whiter in the center.
Transfer to a rack until completely cooled.
