1. Prepare 3 empty egg boxes and perforate the bottom to deposit the mini cones firmly. You can also use a grid with squares and hold it over the sink.
2. In a saucepan, mix all the ingredients except butter and vanilla.
3. Bring to a boil and cook over high heat for about 20 minutes or until a candy thermometer indicates 115°C (240°F).
4. Remove from heat and let cool for 10 minutes. Add butter and vanilla and beat at high speed for 5 minutes.
5. Pour into the mini cones.
6. Let cool in the fridge for a few hours before enjoying.
