1. Beat the egg whites until stiff and set aside.
2. In a bowl, mix the flour and baking powder. Add the egg yolks and mix with a whisk. Add the milk and mix. Then, gently fold in the beaten egg whites. Season with salt.
3. In a non-stick pan, heat 1 tablespoon of olive oil. Drop small amounts of batter onto the pan. Cook the blinis over low heat for 45 seconds on each side, or until they slide off the pan. Transfer to a grill and let cool.
4. In a pan, heat the remaining oil. Add the sliced mushrooms and sauté for 5 minutes.
5. Form small rolls with the smoked salmon and place on the blinis. Add a piece of shiitake.
6. Garnish with rocket shoots and serve immediately.
