Soak the gelatin in a tablespoon of 15% cream, taken from the required quantity.
Heat the rest of the cream with the crushed coriander seeds until boiling point.
Cover and let infuse for 10 minutes.
Set aside a few slices of smoked salmon for decorating your glasses.
Filter the cream and transfer it to the blender with the smoked salmon and the gelatin that has been previously melted for 20 seconds in the microwave.
Mix until a very fine and homogeneous texture is obtained.
Pour the preparation into glasses and refrigerate for 2 hours.
Decorate with smoked salmon and chives.
