1. Preheat the oven to 375°F.
2. Flour the work surface and the pastry roller. Roll out the puff pastry. Place the pastry in the tart mold.
3. Cut off the excess pastry with a knife. Prick the bottom with a fork and bake for 7 minutes. Remove from the oven and let cool completely.
4. In a saucepan, melt the butter and cook the onion for 2 minutes. Add the spinach and cook for 2 minutes.
5. Beat the eggs like an omelette. Season with salt and pepper. Add the milk and cream and mix well. Set aside.
6. Transfer the spinach and onion mixture to the tart shell.
7. Pour in the egg mixture. Sprinkle with parmesan.
8. Bake for 20 minutes.
