1. Preheat the oven to 350°F.
2. In a bowl, mix the ricotta, curry powder, and spinach. Season with salt and pepper.
3. Cut each brick leaf in half. Fold the round edge over the straight edge to obtain a rectangle.
4. Place the filling at one end; fold several times, from one edge to the other, until the other end, keeping a triangular shape.
5. Place on a baking sheet lined with parchment paper.
6. Bake for 10 minutes.
7. Remove from the oven and serve.
