1. Rinse, core and cut the peppers into pieces. Peel and chop the shallots. Preheat the oven to 375°F (190°C).
2. In a heavy-bottomed saucepan, heat the oil. Add the chicken pieces and brown on all sides. Remove and set aside on a plate.
3. In the same saucepan, sauté the shallots without browning them. Return the chicken to the saucepan. Add the juice that has accumulated on the plate. Add the peppers and oregano branches. Season with salt and pepper. Cover the saucepan, place in the oven and cook for 40 minutes. Add the pitted olives and return to the oven for 10 minutes.
4. To serve, transfer the chicken pieces with the peppers and olives to a serving dish. Drizzle with the cooking juice and serve with noodles or rice.
