1. Preheat the oven to 350°F.

2. Coarsely chop the pistachios in a food processor. Set aside.

3. Cut the chicken breasts in half lengthwise, being careful to keep them attached. Lay them flat on a cutting board. Season the inside with salt and pepper.

4. In a pan, dry roast the pistachios. Remove and set aside in a bowl.

5. Add oil to the pan. Add the onion and cook for 2 minutes.

6. In the bowl with pistachios, mix the crumbled blue cheese and onion.

7. Spread the mixture on the chicken breasts.

8. Close the chicken breasts with a toothpick. Leave slightly open.

9. Place the chicken in an oiled baking dish. Cover with aluminum foil.

10. Bake for 25 minutes.

11. Remove the foil and finish cooking for 5 minutes.

12. Remove from the oven and serve immediately.
