Preparation
1- Preheat the oven to 375°F.
2- With your fingers, gently lift the skin of the chickens without piercing it.
3- Season the inside of the chickens with salt and pepper.
4- With your fingers, spread half of the herb cheese under the skin of the chickens. Stuff the inside of the small chickens with the remaining cheese.
5- Place the chickens in a baking dish. Bake for 45 minutes or until the chickens are golden brown.
6- Serve with a mashed potato and carrot dish.
