1. Preheat the oven to 375°F.

3. Place the chicken breasts on a board. Using a long-bladed knife, cut the breasts in half lengthwise without separating the pieces, so that you can open them like a book.
4. Brush each chicken breast with Dijon mustard.
5. Cover one side of the chicken breasts with the mushroom mixture.
6. Fold the other side of the chicken breasts over the mushroom mixture like a wallet. Secure with wooden skewers.
7. Transfer the stuffed chicken breasts to a baking dish. Bake for 20 minutes or until the chicken is tender and cooked through.
8. Remove from the oven and serve with rice or barley.
