Preheat the oven to 350°F.

1. Remove the mushroom stems. Set aside.

2. Open the sausages in half lengthwise and remove the meat.

3. In a bowl, mix the sausage meat, tomato pesto, and chopped parsley.

4. Season with salt and pepper. Stuff the mushrooms with the sausage mixture and place a knob of butter on top of each mushroom.

5. Bake for 15 minutes.

Serve with a salad.
