1. In a blender, puree the parsley, mint, coriander, and garlic. Add the cream cheese and mix until smooth. Season with salt and pepper.
2. In a hot pan, melt the butter. Add the pork fillet and brown on all sides.
3. Transfer the fillet to a cutting board. Make a lengthwise incision in the fillet and cut without detaching.
4. Spread a layer of the cheese and herb mixture on the inside of the fillet. Close and secure with a wooden pick.
5. Bake for 25 minutes.
6. Remove from the oven and serve immediately.
