1. Rinse the zucchinis and cut them into slices. Rinse the tomatoes and cut them into large pieces. Peel the potatoes, rinse them and cut them into large dice. Rinse the cauliflower and cut it into small florets.
2. Peel and chop the onions. In a pot, sauté them in oil. Sprinkle with ras-el-hanout, add the tomato concentrate and mix well. Add the vinegar, tomatoes, zucchinis, cauliflower and potatoes. Season with salt and pepper. Drizzle with white wine and simmer for 25 minutes over low heat.
3. Garnish with coriander, and serve hot or cold.
