1. In a pot of boiling salted water, cook the snow peas for 2 minutes. Drain.
2. Cool in ice water to retain the tender green color. Drain.
3. Cut the peas into julienne and set aside.
4. In a bowl, whisk together the rice vinegar and damari sauce. Add the sambal olek and sesame oil; mix well.
5. In a salad bowl, combine the peas and carrot in julienne. Pour the vinaigrette and mix.
6. Sprinkle with freshly grated coconut. Serve.
