1. Peel the sweet potatoes. Finely chop in a large bowl. Add a good pinch of salt, pepper, ginger, and grated nutmeg. Mix with your hands.
2. Place the sweet potato mixture in a high casserole dish. Drizzle with milk and cream. Cover and cook for 25 minutes over low heat.
3. Preheat the oven to 350°F (177°C). Rub a gratin dish with the clove of garlic. Butter the dish. With a slotted spoon, carefully transfer the sweet potatoes to the dish. Add half of the remaining cooking liquid.
4. Sprinkle with coriander. Cover the sweet potatoes with grated cheddar. Bake for 15 minutes and serve in the same dish with chicken skewers.
